(I need to use up veggies from last week before they go bad.)
Tuesday
White Fish and Sweet Potato Tacos
with zucchini fries.
Wednesday
Coconut Shrimp
with Edamame and Sweet Corn Salad,
and brown rice.
Thursday
Crock Pot Spinach and Eggplant Lasagna!
and (ghetto) caprese salad
(aka grape tomatoes with mozzarella
and some kind of vinaigrette)
Friday
MorningStar BBQ Riblets with Corn,
Steamed Cauliflower and Sweet Potato Fries.
Saturday & Sunday
Most likely eating out.
Possibly pizza, sushi or something quick and easy, like sandwiches?
Otherwise, I will whip something up all quick-like.
