I don't know what we'll eat, but I think I'm going to try and make these Vegan Pumpkin Cinnamon rolls I found from Eat, Live, Run. That way, I can make them if we go visit Nate's sister for Thanksgiving!
HEY -- I need new recipes. Got any for me to try? My only request is that they do not require fancy cool tools (except a mandolin, I do have that!) or techniques. I am not technique-oriented. Leave me a link/the recipe in the comments! Thanks!

Sounds great! That is awesome that you meal plan. I plan but we aren't home early enough during the week to do many sit-down dinners together.
My recipe suggestions...I love lasagna casserole. It's a spin off traditional lasagna except you make it with shell noodles and the filling as the base and then top it with sauce, your meat, and more cheese. So delish. I don't have the recipe nearby though, but those are the basic steps, so its not layers and layers.
I love soup when it is cold out, with bread and a salad. soo good!
Also, we love having fruit salads with dinner. And using the crock pot. I find a lot of ideas on blogs and also some on pinterest.
