i got to get him back

Last night I used my leftover chick pea, sweet potato and onion mash-up to make some veggie burgers. Unfortunately, there isn't much to bind these three ingredients together, so they wind up kind of falling apart, but they're delicious anyhow:

on a whole wheat sandwich thin with a little parmesan and my condiment of choice: mayo

Delish!

Then we made a second batch and just ate them with forks. And because they're sweet potato, they are filled with vitamins and nutrients (I don't ever remove the skins from potatos of any kind - they're my favorite part!) I think they would be good fried as fritters (kind of in balls like hush puppies?) instead of cakes, as well. An adventure for another time!
